Domaine Allante Boulanger, based in Poligny, belongs to the new generation of Jura producers focused on purity, precision and sensitive expression of local varieties. Working mainly with chardonnay, savagnin, trousseau and pinot noir on grey and blue marl, the domaine produces refined wines driven by tension and a gentle, minimalist winemaking approach. The whites show clean citrus, white apple, fine florals and wet stone, with a straight, saline and vibrant palate. The savagnins gain added depth with dried herbs, citrus zest and subtle spice notes. The reds are delicate and aromatic, with cherry, wild strawberry and light spice, carried by a fluid and highly drinkable texture.
