Ulysse Collin, based in Congy in the southern Côte des Blancs, is one of the most groundbreaking domaines in modern Champagne. Olivier Collin has built his style on rigorous single parcel work, long élevage and a quest for depth and identity. The vineyards, farmed carefully with low intervention, sit on chalk, clay and flint, giving the wines singular mineral tension and notable density. Vinification uses indigenous yeasts, mostly in barrels and demi muids, with extended ageing on lees, very low sulfur and minimal or no dosage. The wines show ripe citrus, yellow fruits, baked apple, white flowers, wet chalk and occasional smoky or honeyed notes. The palate is broad, deep and structured, with fine bubbles and remarkable vertical energy. Ulysse Collin’s style is intense, vibrant and precise, one of the most powerful and distinctive signatures in Champagne today.
