Domaine François Cotat, based in Chavignol like his cousin Pascal, is one of the most distinctive and sought after producers in Sancerre. Working steep slopes such as Monts Damnés and Cul de Beaujeu, François farms old vine sauvignon blanc on Kimmeridgian marls with a highly artisanal philosophy. Harvests are late, ripeness is high and yields are minimal. Fermentations proceed slowly with indigenous yeasts and élevage is long in old foudres. The wines show aromas of preserved lemon, ripe grapefruit, white peach, acacia blossom, flint and sometimes a saline or honeyed note. The palate is large scaled, deep and enveloping yet defined by sharp minerality and underlying tension that keeps everything in balance. These wines age beautifully, gaining complexity and salinity over time. The François Cotat style is a generous, vibrant, atypical interpretation of sauvignon blanc.
