Domaine Pascal Cotat, based in Chavignol in the Sancerre appellation, is one of the Loire Valley’s most distinctive and sought after producers. Like his cousin François, Pascal farms iconic vineyards such as Les Monts Damnés and Cul de Beaujeu, planted on the steep Kimmeridgian marls of the village. The approach is deeply artisanal, with tiny yields, late harvesting and slow fermentations with indigenous yeasts. The wines show ripe lemon, grapefruit, white peach, white flowers, flint and occasionally honeyed or saline notes. The palate is broad, deep and textured, yet lifted by sharp minerality and underlying tension that keeps the wine balanced. Pascal Cotat’s style is generous, vibrant and complex, producing unusually ageworthy Sancerre.
