Pierre Paillard, based in Bouzy on the Montagne de Reims, is a family domaine dedicated to expressing the power and finesse of Grand Cru pinot noir, with smaller plantings of chardonnay. The estate farms around twenty parcels all located in Bouzy, one of Champagne’s warmest and most characterful crus, famous for deep, structured pinot noir. The vineyards are tended carefully with organic principles, focusing on soil health and balanced ripeness. Vinification uses indigenous yeasts in tank, barrel or foudre, with low sulfur and minimal dosage to respect the terroir. The wines show ripe red berries, cherry, blueberry, yellow apple, citrus, dried flowers and warm chalk. The palate is broad, precise and energetic, with fine bubbles, warm mineral tones typical of Bouzy and a long, harmonious finish.
