Stroebel, based in Villers aux Nœuds south of Reims, is one of the most distinctive and sought after growers in contemporary Champagne. Timothée Stroebel works with an artisanal, minimally interventionist philosophy, entirely focused on soil vitality and natural fruit expression. The vineyards, farmed through an intuitive biodynamic approach, lie on chalk, clay and sand, producing wines that are vibrant, earthy and remarkably pure. Vinification relies on indigenous yeasts in barrels and demi muids, with no filtration, very low sulfur and little or no dosage. The wines show aromas of ripe yellow fruits, baked apple, fresh hazelnut, white flowers, wet chalk and occasional soft spice or herbal tea notes. The palate is deep, broad and textural, yet carried by mineral tension, with delicate bubbles and a long, saline and slightly oxidative finish. Stroebel’s style is vibrant, artisanal and alive, one of the most personal signatures in today’s Champagne.
