Domaine du Collier, created by Antoine Foucault in Chacé in the Saumur area, is one of the most admired estates in the modern Loire. Inheriting the spirit of Clos Rougeard while forging his own identity, Antoine works very old chenin and cabernet franc vines planted on deeply draining tuffeau limestone. Viticulture is rigorous, yields extremely low and élevage long, often three years or more in old barrels. The white wines show quince, ripe apple, beeswax, white flowers and flint, with a palate that is tense, saline, deep and vibrant. The reds reveal black cherry, raspberry, crushed leaf, blond tobacco, wet stone and a silky yet firm texture. The Collier style is marked by pure intensity, mineral precision and outstanding aging potential, making it one of the most sincere and profound expressions of Saumur.
