Cazé Thibaut, based in Châtillon sur Marne in the Vallée de la Marne, is part of the new wave of growers redefining the potential of pinot meunier in Champagne. Fabien Cazé farms organically with a low intervention philosophy, working parcels planted on clay, sand and chalk ideally suited to meunier. Vinification is done with indigenous yeasts, often in barrel, with minimal sulfur and very low dosage. Each cuvée highlights a single lieu dit or a precise parcel expression. The wines show ripe apple, yellow plum, delicate red berries, white flowers, wet chalk and occasionally light herbal or spicy notes. The palate is pure, tense and juicy, with fine bubbles and a firm mineral backbone. Cazé Thibaut’s style is bright, precise and energetic, showcasing the depth meunier can reach when crafted with care.
