Pierre Gerbais, based in Celles sur Ource in the Aube, is one of the standout estates of the Côte des Bar, known for its precise, terroir forward and deeply familial approach. The vineyards, farmed sustainably and now converting to organic, lie on Kimmeridgian soils of marl and limestone, similar to Chablis, which bring salinity and depth to the wines. The domaine is also noted for its work with pinot blanc, a rare Champagne variety, complementing the dominant pinot noir and chardonnay. Vinification uses indigenous yeasts, in tank or barrel depending on the cuvée, with minimal sulfur and low dosage. The wines show ripe apple, white fruits, citrus zest, white flowers, wet stone and occasional delicate yellow fruit. The palate is broad, linear and mouthwatering, with fine bubbles, chalky minerality and a long, precise finish.
