Paul Launois, based in Le Mesnil sur Oger at the heart of the Côte des Blancs, represents a new generation of producers redefining Grand Cru chardonnay through precision, modern craftsmanship and a deep sense of terroir. The vineyard is entirely planted to chardonnay on the deep white chalk of Le Mesnil and farmed carefully with sustainable practices. Vinification relies on indigenous yeasts, stainless steel or barrels depending on the cuvée, with moderate sulfur and low dosage to retain natural tension. The wines show ripe lemon, green apple, pear, white flowers, fresh chalk and occasional notes of biscuit or hazelnut. The palate is linear, energetic and crystalline, with fine bubbles, vibrant minerality and a long, saline finish. Paul Launois’ style is pure, bright and precise, a clean contemporary expression of Le Mesnil.
