Maison Ayala, founded in 1860 in Aÿ, is one of Champagne’s historic houses, recognized for its dry, clean and elegant style. Acquired by the Bollinger family in the early 2000s, Ayala has undergone a modern renaissance while maintaining its hallmark: finesse, aromatic purity and very low dosage that highlights the natural structure of the wines. Chardonnay is central in the blends, bringing lift, floral notes and brightness. The wines show ripe lemon, green apple, white flowers, wet chalk and a light brioche touch. The palate is fresh, taut and precise, with fine bubbles and a clean, saline finish. Brut Majeur embodies this spirit, while the vintage cuvées and Perle d’Ayala offer added depth. Ayala’s style is sober, pure and elegant, one of the most refined among the grand maisons.
