Salon, based in Le Mesnil sur Oger and founded in the early twentieth century by Aimé Salon, is one of the most legendary domaines in Champagne. Its uniqueness rests on a radical principle: producing only a single Blanc de Blancs Grand Cru from Le Mesnil, from a single grape variety, chardonnay, and only in vintages deemed perfect. Production is extremely small and the style is one of absolute purity. The vineyards sit on the deep, cool chalk of Le Mesnil, giving chardonnay linear tension, extraordinary finesse and unmatched ageing capacity. Vinification is in stainless steel, with indigenous yeasts, no oak, long lees ageing and late disgorgement. The wines show ripe lemon, white flowers, flint, green apple, fresh chalk and occasionally saline or iodine notes. The palate is straight, chiselled and crystalline, with fine bubbles, vertical energy and a depth that unfolds over decades. Salon’s style is pure, luminous and aristocratic, the most rarefied and refined expression of Mesnil chardonnay.
