Château Pavie is one of the most imposing and sculptural estates of Saint Émilion, defined by massive depth, lush ripeness and a powerful mineral backbone that set it apart from the rest of the plateau. Located on the southern slope of the limestone côte, the vineyard lies on a mosaic of asteriated limestone, deep clay and sandy sections, giving merlot, cabernet franc and cabernet sauvignon an intense, monumental expression. Pavie’s style is marked by dark, opulent aromas of candied blackberry, deep blackcurrant, kirsch like cherry, liquorice, cocoa, espresso, warm spices, dark truffle and sometimes menthol or warm stone. The palate is huge, enveloping and voluminous, built on dense but polished tannins and driven by an almost earthy power. The finish is long, solemn and vibrant, shaped by a mineral freshness that balances the wine’s concentration. With age, Pavie gains spectacular complexity, merging black fruit, balsamic tones, deep spices and a velvety texture that reveals the grandeur of this singular terroir. It is a wine of amplitude, structure and intensity, the most monumental expression of Saint Émilion’s southern slope.
