Château Chalon is the historic cradle of Vin Jaune, grown on steep slopes of grey and blue marl from the Lias era. This demanding and luminous terroir allows Savagnin to ripen slowly and develop remarkable intensity. The wines show aromas of walnut, curry, saffron, dried apple, aged Comté and warm stone. The palate is vertical, tense and profound with marked salinity and extraordinary length. The style is unique, built not only for decades but sometimes for a century.
Food pairing
Château Chalon pairs beautifully with aged Comté, creamy poultry dishes, morels, river fish, Vin Jaune sauces and mild curries.
Good to know
Only vintages deemed worthy are produced under the Château Chalon appellation. The wine is aged sous voile for more than six years before being bottled in the traditional 62 cl clavelin. It is one of the greatest ageworthy dry wines in the world.
