With significant vineyard holdings in Aÿ, Verzenay and Tauxières, Bollinger relies heavily on structured, ripe pinot fruit. A unique hallmark of the house is the use of reserve wines aged in magnums under cork, which adds depth, texture and complexity. Barrel fermentation is widely practiced and ageing on lees is long, far beyond legal requirements. The wines show baked apple, yellow fruits, toasted hazelnut, gentle spice, biscuit, light cocoa and warm chalk. The palate is broad, creamy and deep, carried by discreet tension and remarkable length. Bollinger’s style is rich, vinous, noble and unmistakable, with extraordinary ageing potential.
