Jérôme Prévost, based in Gueux in the Petite Montagne de Reims, has become one of Champagne’s most cult figures thanks to his radical single vineyard approach and his singular work with pinot meunier. His sole regular cuvée, La Closerie Les Béguines, comes from one lieu dit planted in the 1960s on a mix of sand, clay silt and chalk that gives meunier an uncommon depth. Farming is respectful and low intervention, fermentation is done with indigenous yeasts entirely in barrels, élevage is long, sulfur minimal and dosage very low. The wines show aromas of dried herbs, yellow apple, delicate red berries, ripe citrus, fine spice, wet chalk and sometimes a subtle floral or smoky nuance. The palate is vibrant, broad, vertical and saline, with striking energy and a textured, almost spiritual intensity. Prévost’s style is pure, intense and contemplative, a unique expression of meunier and a benchmark of contemporary Champagne.
