Vinification involves whole-cluster fermentation, gentle pressing, moderate use of new oak (around 20 percent for whites, 30 percent for reds), and ageing takes place in the ancient fortified tower of Beaune known as the Bastion. The range includes regional appellations such as Viré-Clessé and Bourgogne, prestigious Premier Crus like Beaune Les Grèves and Savigny-lès-Beaune La Dominode, and several Grand Crus including Chambertin-Clos de Bèze.
