At the beginning of the 20th century, Eugène-Aimé Salon conceived an idea that seemed almost impossible at the time: to create a Champagne capable of standing entirely on its own, without blending grape varieties or multiple terroirs. While Champagne houses traditionally sought balance through blends of Pinot Noir, Pinot Meunier and Chardonnay, he chose the exact opposite approach. He relied exclusively on Chardonnay, convinced that the exceptional terroir of Le Mesnil-sur-Oger alone could express the full nobility of Champagne. This bold decision gave birth to one of the most iconic Champagnes ever produced.
Behind this apparent simplicity lies uncompromising standards. If a vintage does not meet the house's exacting criteria, no Salon Champagne is produced. The grapes are instead directed to Maison Delamotte, Salon's historic sister house and long-standing partner.
Le Mesnil-sur-Oger is widely regarded as one of the world's greatest Chardonnay terroirs. Classified as Grand Cru, this renowned village in the Côte des Blancs is rooted in pure chalk soils that provide the grapes with exceptional freshness, remarkable mineral tension, and extraordinary ageing potential. This distinctive mineral character defines every great Salon vintage. Notes of citrus, white flowers, fresh hazelnut, delicate brioche and wet chalk gradually evolve over decades into aromas of extraordinary complexity.
